Cheesy One-Pot Hamburger Pasta

Cheesy One-Pot Hamburger Pasta

Ingredients
- 1 medium zucchini, grated
- 1 cup carrot, diced
- 1 medium yellow onion, diced
- 1 cup mushrooms, diced
- 1 tablespoon olive oil
- 1 pound Hansen’s Wagyu-Holstein ground beef*
- Salt and pepper, to taste
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 cups pasta of choice, uncooked
- 2 cups beef broth
- 1 1/2 cups whole milk*
- 1 tablespoon tomato paste
- 1 1/2 to 2 cups shredded cheddar cheese*
- Parsley, to garnish

Directions
- Heat a skillet to medium-high heat. Once pan is hot, drizzle with olive oil and add ground beef to the pan. Saute for 1-2 minutes, breaking beef into smaller pieces with a wooden spoon. Season with salt and pepper, to taste.
- Add onions, carrots, zucchini and mushrooms to pan with the ground beef. Cook for 3-5 minutes or until veggies begin to soften.
- Season with chili powder, smoked paprika and garlic powder. Stir well so the beef and vegetables are evenly coated.
- Add uncooked pasta, beef broth and milk to the skillet. Stir in the tomato paste until well combined.
- Season with additional salt and pepper to taste. Allow the mixture to come to a simmer, then lower heat to medium-low and cover with a lid. Simmer for 10-12 minutes or until the pasta is al dente and the sauce has thickened.
- Simmer for an additional 10-12 minutes until the broth is reduced.
- Once the pasta is cooked, remove from heat. Stir in shredded cheddar cheese until melted and combined.
- Garnish with parsley and serve.
