Parmesan Italian Sausage Soup

Parmesan Italian Sausage Soup
Serves: 6
Ingredients:
- 1 lb ground sausage*
- 1 Tbsp olive oil*
- 1 small onion, diced**
- 3 cloves garlic, minced**
- 4 cups chicken broth
- 1 cup Hansen’s heavy cream*
- 2 tsp Italian seasoning
- 1 14.5-ounce can diced tomatoes, drained
- 1 cup ditalini pasta (or small pasta of choice)
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese*
- Salt and black pepper, to taste

Directions:
- In a large pot, warm olive oil over medium heat and brown the sausage. Once cooked, remove from pot and set aside. Drain grease if needed.
- Saute diced onion and minced garlic in the pot for 2-3 minutes until softened.
- Pour in the chicken broth and bring the mixture to a simmer.
- Stir in drained diced tomatoes, Italian seasoning and cooked sausage.
- Add ditalini pasta (or other small pasta) and cook according to package instructions.
- Add heavy cream, grated Parmesan cheese and chopped spinach, stirring frequently to incorporate the cheese.
- Allow soup to simmer for an additional 2-3 minutes, or until the spinach wilts and the soup is creamy.
- Season with salt and pepper to taste.
